The palate provides a satisfying mix of jam on over-done toast, straw, liquorice Allsorts, fried chilli, crab shell, demerara and toasted hazelnuts; the peat smoke tingles without overpowering. The reduced nose has burnt hay and Cornish wafers; tar, whittled wood and sea-invaded beach bonfires.
