The neat palate had breath-taking chilli heat, a good whack of wood - and the sweet sunshine glow of spun sugar, yum-yums, vanilla and toffee apple sticks. The reduced nose had caramel, golden meringues, golden syrup and Eat Me dates – served on an upturned tea chest – also hints of patchouli incense. Much less heat on the reduced palate – we got candy floss, candy corns and brown sugar, cough candy and a finish of burnt twigs. In the Texan heat this whisky had reached a whopping 71.2% ABV during maturation.
