There were a lot of dried herbs, chimney soot, salted liquorice, seaweed, burning driftwood and heavy medicinal tones. Reduction brought out smoked cereals, hot mustard oil, roof pitch, smouldering fir wood and natural tar extracts. The palate was rather immense, full of thick, tarry phenolics, black pepper, charred brisket and rich, intense peat smoke.
