Also in that oven we baked a \u003cstrong\u003erustic Italian apple cake\u003c\/strong\u003e made with \u003cstrong\u003eolive oil\u003c\/strong\u003e instead of butter with plenty of cinnamon and brown sugar added. The taste had the initial \u003cstrong\u003emouth-puckering\u003c\/strong\u003e sharpness of \u003cstrong\u003estewed rhubarb\u003c\/strong\u003e which was quickly sweetened by \u003cstrong\u003ehoney and maple syrup\u003c\/strong\u003e before a gentle ginger spiciness kicked in.
