The taste was no different with smoked mackerel and ginger Japanese pilaf and a Basque style stewed salted cod called bacalao with hearty potatoes, briny olives and layers of flavour. After reduction, the scent of peat poached pears, sweet smoky peas, lychees in rosemary oil and a lighted menthol cigarette.
