Fruits rapidly followed with a pleasing display of pineapple, honeydew melon and caramelised pear doused with a splash of citrus. A peppery tingle brought the palate towards deliciously sweet flavours of toffee apples and crème brulee dusted with Demerara sugar and orange blossom. Water enhanced the cedar tones with lots of sweet wood and its welcomed companions of coconut and vanilla ice cream. Herbal elements teased at the edges but it was a boost of tangerine, caramel and pineapple puree that seized the show.
