Waves of thick cut marmalade crashed into salted liquorice with the weight of a fully loaded galleon. A distinctly oily and nutty temperament led us towards palo cortado sherry, with its complex layers of rich flavour. The palate had us falling into realms of dried fruits, however our landing was cushioned by pillows of figs and prunes encased in a pleated sheet of crystalised orange. A refreshing tang of ginger marmalade intertwined with eucalyptus leaves before the appearance of more maritime notes, as ship's rope combined with the coal cellar of a steam ship. A hint of sweet oysters followed and beckoned a spicy finish, characterised by nutmeg and cinnamon with a lasting nutty refrain.
