This is one of those. The nose combined clover honey and heather flowers with bonfire embers, seared padron peppers and barbecued shellfish. The palate’s intense, fiery whack of perfumed smoke, burnt lavender and woodfire ash also suggested lime, vanilla, cumin and pungent oak. On the reduced nose, we gathered driftwood from a rocky shore, toasted marshmallows on the fire and enjoyed stargazy pie with pumpernickel bread. The palate had burnt toast, chalk and tulips, olive oil cake and salty margaritas. Adding water brought out aromas of blueberry, raspberry and rhubarb all sprinkled with black tea leaves. The palate displayed amazing integration of stewed plums, Armagnac and tobacco. At 13 years of age, we combined selected casks from this distillery. We then returned the single malt into a variety of different casks to develop further. After the addition of water, we got spaghetti in a chilli and garlic sauce as well as a salade niçoise on the nose. To taste, we found an olive oil and balsamic dip for a chunky piece of herbed wholewheat bread. Our overall impression was of a rich and indulgent nose, combining top-notes of butterscotch and vanilla custard with more savoury base notes of pata negra and Virginia tobacco. The palate, which had beautiful velvety textures, followed a similar journey from sweet forenoon (fruit tarts, warm honey) to a savoury, mouth-drying dusk, hinting at balsamic reduction and leather.
