A perfect fusion we felt, one which balanced the briny, lemony distillery character with the richness of balsamic glaze and bacon jam coming from the cask. Water revealed kippers, iodine, camphor and some lovely herbal ointments. The palate suggested smouldering hardwoods up front, with resinous fir wood, natural tar extracts, pickled walnuts and smoked game meats. The Panel agreed it retained a charmingly old-school edge. Water enhanced the rich and sweet layers of peat flavour, with salty and sweet sherry notes mingling underneath. In the aftertaste we found salted liquorice and unlit cigars. The butts were seasoned in the sherry triangle for 13 months with syrupy sweet PX wine, before coming to Scotland to be filled with a wonderfully fruity Speyside single malt, which we are now proud to present to you.\u003c\/p\u003e\n\u003cp\u003eWe were reminded of popping the cork of an orange muscat wine bottle, with those typical aromas of apricots, oranges and pears next to toasted almonds on brioche and fragrant exotic wood. At first on the palate we found tingling spicy fruit flavours before we had a sip of very pleasing hot mulled white wine made with fresh orange juice, star anise, honey and cinnamon. Following reduction, we opened a tin of amaretto-infused mince pies – sweet, spicy and tart yet perfectly balanced, with mellow almond notes emanating from the liqueur. We tasted lemon meringue, vanilla and toffee while in the finish a wheatgrass zinger arrived, using fresh wheatgrass juice, apple slices and lemon, plus a little bit of ginger. Water added the herbal scent of basil and lime before we got cherry pie, chocolate drops and fresh Seville orange curd. On the palate it was smooth and sweet, with the freshness of eucalyptus. The spirit was originally filled to cask in 1998, the last year that Scotland qualified when France were the hosts. This rich, smoky whisky has acquired depth and complexity through long maturation in American white oak (both bourbon and oloroso sherry casks) and is the perfect pour to toast the team's achievement . \u003c\/p\u003e\n\u003cp\u003eThe nose opened with a warm glow of tobacco and marzipan soaked in brandy. Confit tangerine, honey and barley sugars were followed by dried apricots and a soft swirl of lemon danish. The fruit character grew steadily as we sucked orange lozenges, while a shimmer of blowtorched mango added brightness. The palate carried a savoury thread of smoked cheese and chutney, with depth coming from black pepper and charcoal crackers. Water revealed polished mahogany as a musky warmth met beeswax and cedar wood, coal dust and liquorice root. Thyme resting on hot coals was then sprinkled on to barbecued burnt ends along with a slow grind of curry spices. Lemon sorbet and hickory smoke, seeded crispbread, cherry cough sweets and a cooling mentholic finish brought the experience to a close. The starting point for this small batch was two ex-bourbon hogsheads of single malt Scotch whisky. One cask was transferred at 25 years old to a first fill American oak oloroso hogshead while the other remained in bourbon. Huge on the palate, this was spicy and peppery at first but then delivered the deep, dark sweetness of muscovado sugar. \u003cbr\u003e\u003cbr\u003eFollowing reduction we expanded our coffeeish contemplations, finding comparisons to camp coffee, Turkish coffee or carajllo, the Spanish version of an Irish coffee using brandy, rum or mezcal. To taste, we had an espresso romano, combining a coffee shot with a candied lemon slice and a teaspoon of sugar. At eight years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further.
