A world of crushed oatcakes, buttermilk, barley water, pollen-laden yellow flowers, greengage plums, plush cereals, velvety white fruit jams and long-aged dessert wines. Fragrant, complex and extremely beautiful. With water we noted freshly milled grist, cooling wort, autolytic sourdough starter, honey cake and an elevated floral complexity. The palate opened with heather honey and milk bottle sweets. A natural, spirit-driven sweetness full of mango pudding, lactic stout ales, brioche, sultanas and flambeed banana drizzled with vanilla extract. Incredibly gentle but still with a ‘tannic grip’, a perfect marriage between dark chocolate, Grand Marnier and candied orange rind – all in a truffle. A tiny drop of water and you will be on a magic carpet ride to Alcaiceria, the Great Bazaar of Granada, while on the palate you watched the sunset over the city and the Alhambra. With a little water, delightful textures appeared as miso paste, butter and salted caramel blended into fig ice cream. Now, the soft leather of vintage car seats sang a chorus in unison with cured ham, lamb chops and dried seaweed. Tart aromas of apples and quince jelly mingled with dried mango, cola-flavoured sweets and the dust of an old fruit cellar. Antique glass sweetie jars were crammed with cherry lips, crumbling chalky lovehearts and fizzy sherbet chews flavoured with violets. After adding a small dash of water our attention was drawn to an old tea chest in the corner. Sitting on top was a vase of geraniums, while we found a stash of apple tobacco and tea tree oil inside.
