With water we found bitter lemon, dried herbs, exotic fruit teas, wildflowers, gorse and lanolin. Following dilution aromas of white pepper, caramel and oak spices emerged, while to taste a candied fruit Vollkornbrot (German for ‘whole grain bread’) with toasted nuts, chocolate chunks and, of course, candied fruits – deeply satisfying. With water came a softer, more floral dimensions of roses, melon and ripe guava on a bed of toasted oak before banana flambeed in calvados were served with juicy orange segments. The reduced nose offered dried coconut, Lion bars, cherry sponge cake, American cream soda and wood shavings. Water changed the perception with the scent of beeswax on oak, candied sunflower seeds, fresh cut grass and eucalyptus essential oil.
