To taste, we visualised a visit to the Scottish Borders village of St Abbs with its thriving fishing harbour catching lobsters and local edible crabs. Imagine sitting on the harbour wall and eating, what is a must, one of the freshest crab sandwiches one can find. After reduction the wind carried exhaust fumes from the trawlers and wet wood, as well as wet, yellow rubber boots and raincoats. We washed down the crab sandwich with a pickleback. In reduction the nose delivered dried pineapple, a rocky road ice cream float and ‘faire chabròl’ with hot chocolate. On the palate now we got the boozy fruits of pineapple juice with pastis and orange peel in sangria before finishing with molasses, tropical trail mix and hints of pepper and star anise. Also noted were sea breezes, lightly singed heather and an underlying earthy richness. Reduction brought a softer side full of yellow fruitiness, cedar flowers, hardwood shavings, white pepper and green tomato chutney. When neat, the palate opened with a two-hander of lemon sharpness and chilli warmth. Then it evolved towards dried cherry with peppery and earthy undertones. In the background there were wee notes of dried mango and pomegranate. Following the addition of water, we found ourselves in a coffee shop in Amsterdam and ordered a chocolate fudge affogato – chocolatey fudge ice cream, sea-salted almonds and piping hot espresso.
