Abundant sweetness of coconut, rich tea biscuits and fudge on the palate made way for peppery spices, cinnamon and ginger before apricots, peaches and bananas merged on the finish. Water enticed an oiliness from the spirit alongside banoffee pie, Turkish delight, and meringue on a bed of toasted coconut. The mouthfeel had a sweet, syrupy texture with raisins, caramel and maple syrup but, remaining in the background, was the meaty note of well-fried bacon on top of a pancake stack. With the addition of water, we found ourselves in a mountain bothy searing venison in a cast-iron pan. On the palate we enjoyed the venison steak with a blueberry sauce and a red wine jus. In time there are hints of caraway, wild mint and mandarin liqueurs. Wonderful freshness and vivid complexity. The careful addition of water brings out notes of young calvados, mineral oil, a savoury spiciness and various dark fruits such as golden sultanas and fig tarte tatin. The mouth is richly textured with immediate notes of treacle sponge, pear eau de vie, aged muscat wine and spicy quince jelly. Citrus rinds, rye bread and expensive Manhattan cocktails. After reduction, we ate sardines on burnt toast with a squirt of lemon alongside a vigorous aroma of muscle rub and tea tree oil. To taste, barbequed roasted lemon sole in a salted butter sauce and crushed roots with walnut and mace butter. The neat palate dazzled with similar complexity - lots of myrtle, spiced lemon marmalade, orange cocktail bitters, shoe leather, coal tar soap and gentle red chilli heat. With reduction there was more gentle vanilla cream soda sweetness, strawberry jam, molten liquorice, green ginger wine, herbal bitters and date molasses. We transferred one into a first-fill American oak oloroso hogshead and the other into a second-fill Spanish oak PX hogshead. The casks were then married together before bottling. The nose turned out fresh and fruity – fruit chewing gum, honeydew melon, orange and pear drops, with complicating elements of beeswax, lemongrass and chamomile, plus the promise of sweetness: crème brûlée, banoffee pie, white chocolate and foamy bananas.
