Water brought out toasted coconut, strawberry jam sponge and rosewater. The neat palate opened with sugar puff sweetness, runny honey, maple syrup, rum and raisin fudge, and lovely, earthy bodega funk with a hint of dried marjoram. Reduction made it richer and thicker in texture, with a burst of fruit liqueurs, melon, strawberry wine, caffè latte, a tingle of red chilli and loads of spiced vanilla custard. The starting point for this small batch was two bourbon barrels of single malt Scotch whisky. They were each transferred to new casks at nine years old. One cask was a first fill American oak PX hogshead, while the other was a first fill Spanish oak oloroso hogshead. It was sublime on the palate as we continued dreaming, now of a peach liqueur and raspberry jelly trifle, mango lassi, brioche soaked in honey and pinot gris, as well as orange blossom water. Following a drop of water, the “blemming blooming” just carried on, yet this time the scent was that of flowering, glorious gorse in Scotland as well as Japanese cherry blossom. Overall an austere and powerful profile, the Panel agreed. Water made it really very tarry, but also sharper with more sea air and coastal power. We also noted green olives and pickled lemons. The neat palate was very big and oily in mouthfeel, with immediate flavours of raw, dirty peat, along with puffer smoke, more anchovy paste and soy sauce. Reduction brought huge ashy smoke, along with even greater 'fatness' of mouthfeel and pure seawater, petrol, capers in seawater and both shades of olive. What a beast! A big, characterful dram we all agreed. With water we found fruit salad notes emerging with richly malty and cereal tones underneath. It also delivered some coastal fresh air, along with sharp gooseberry and green apple notes. The palate opened with a rich, oily texture and big flavours of sweet cereals, buttered oatcakes, muddled green herbs, starched linens and mineral oils, plus some funky farmhouse cider vibes. On the palate, sweet oak notes joined ginger-sweet chai tea flavours, while in the finish we noted toasted oak and roasted coffee. After dilution, the coffee turned into a cappuccino sprinkled with cocoa powder, served alongside a warm crumpet with chocolate spread. To taste, we spread apple and blackberry jam on the raisin scone that accompanied our creamy hot chocolate. A splash of water pulled out notes of peaches, manuka honey, pineapple and cut grass.
