The Panel noted elements including toasted pine nuts, olive oil, dried rosemary and hibiscus. With reduction we got freshly sawn pine wood, spiced herbal teas, incense, potpourri and a more vivid waxy note. The palate opened with menthol qualities such as eucalyptus oils, dried mint and mint choc chip ice cream. We also found some lanolin and the sweetness of victoria sponge cake. Water brought flower honey, camphor, mead and dried flowers. An underlying sense of caramel sweetness lingered into the aftertaste. The neat palate gave us a lot of sweetness up front in the form of orange jelly and amaretto cream pie. This was soon followed by cardamom and mint-infused pineapple, mango and melon. The addition of water released a warming wood spice aroma which mingled well with the sweet notes of berries in clotted cream. To taste, we tucked into a cinnamon coffee cake muffin, washed down with a mug of burdock root tea. Reduction brought wintergreen and bright, fruity, hoppy notes, evoking spiced winter ales along with vanilla cake, toffee apples and cinnamon sugar. The palate when neat displayed a more vivid wood spiciness and creamy tannin, balanced by waxes, cooking oils and elements such as spruce beer and cough syrup. Water enhanced these camphory and waxy tones while bringing out nutmeg, ginger powder and more rich vanilla tones.
