The neat palate was very sweet and buttery, lots of yellow and crystallised exotic fruits. In time we also noted mead, boiled lime sweets, citrus curds and dried papaya. With water we found bitter lemon, dried herbs, exotic fruit teas, wildflowers, gorse and lanolin. The reduced nose continued its delicate teasing – nougatine, vanilla, lemon posset and daffodils – then hints of toasted oak. Water added initially an ashy and slightly burnt aroma which floated away and left us with freshly peeled, slightly unripe bananas. On the palate still plenty going on, tangy new oak, marmalade, and a glass of cloudy pastis. The reduced nose, with orange blossom and jasmine, orange sorbet, dates and figs, was April in Seville. Water sweetened the nose to crème brulée, manuka honey and Sauternes, with hints of orange, lemon, rosewater and tobacco. The palate found pumpernickel bread, muesli, almonds and ginger, maple-cured bacon and waxy cherries. In the mouth we found it initially robust and focussed on muesli, nuts, cereals, dried flowers and a sense of prune eau de vie. With water we found heather ales, cinder toffee, oatmeal flapjack with apricot chunks, olive oil cake and pistachio ice cream. The reduced nose was a summer breeze over a hillside of gorse and a picnic of yum yums, coffee cake and party rings. Adding water uncovered sultanas, orange segments and baked peaches with fresh almonds, marzipan and creme catalan while salty sea air blew through an open sherry bodega. Within the bodega, complex oloroso flavours of walnuts and porcini mushrooms blended with heavy and oily malt spirit before a dash of lime juice splashed onto oak spices and dry tannins. The neat palate displayed an initial richness with lemon jelly, pineapple syrup, peach schnapps and melon balls. Water brought white stone fruits, lychee cordial and elderflower champagne.
