On the palate neat, the mead started off with a chalky dryness next to herbal spiciness before the sweetness of candyfloss, popping candy and honeydew melon kicked in. After the addition of water, we made ourselves a malty drink by adding hot milk to Ovaltine while we enjoyed buttered crumpets with thick cut marmalade. Reduction added smooshed daisies, beeswax, ginger ale, malt extract, cedar wood, pinecones and Darjeeling tea with honey. The mouth opened with easy notes of lychee, finer limes, sweet glaze pastries, baclava, flower honey, mead and apricot jam. The neat palate was easy and displayed a well-balanced sweetness. Some warm spice notes of cardamom and caraway also appeared. After reduction, the apples turned sweet and red, well-polished too, before the aroma of pine sap and honeysuckle took centre stage. Water added honey granola bars, white chocolate cheesecake and chocolate vanilla cup-cakes while on the palate now delicate and well balanced, sweet and creamy. As we added water the flowers developed into geraniums, honeysuckle and Turkish Delight before ripe banana arrived with caramel biscuits, coffee and cream. Now much softer in the mouth, vanilla custard coated shortbread and black cherries.
