Sweet honey-cured, peat-smoked salmon mingled with the zest of lavender honey and clementine, while pepper added a hint of spice. Then a warm island breeze blew in a flurry of fruit jelly sweets. The palate delivered bonfire-smoked praline with a heady mix of papaya, mango and melon, layered with cardamom, tobacco and heather honey. Water brought salted butter and toasted brioche with orange blossom, evoking palm trees and fresh ocean air scented with throat lozenges, while the finish held the balsamic, liquorice sweetness of a hidden rainforest grove. We got smoky liquorice root tea, brown sugar-grilled lemonade and a 'penicillin' cocktail of smoky whisky, fresh lemon juice and honey-ginger syrup, garnished with a barbecued lemon slice. After reduction more spices appeared: aniseed, cinnamon, nutmeg and sarsaparilla, plus pimentón dulce (sweet smoked Spanish paprika). On the palate we tucked into yakitori (Japanese grilled chicken skewers) served with a sweet soy sauce. After reduction, we walked the sandy tracks on the machair, which was covered in such flowers as corn marigold, poppies and daisies. The maritime breeze brought sea air and a dark, estery note of blackcurrant jam. The palate was sweet and tooth-coating, with smoked pink grapefruit zest, pear juice and honey-glazed lobster.
