The strong scent of thymol wafted from the Viking bathroom, mixing with minty toothpaste, oily cured meats and smoked duck. Adding a dash of water, the bonfire crackled as we steamed prawns and crabs with seaweed and a few rose petals. Our taste buds were now enlivened by the sweetness of marmalade-glazed ham, honey on toasted crumpets, and smoked pineapple dipped in rock salt. The palate majored on liquorice and ginger – liquorice allsorts and sherbet fountains, ginger snaps and chocolate gingers; plus balsamic, black pepper and ‘biting a beach hut door’. The reduced nose combined saltwater taffy, heather honey and balsamic on figs with crushed sea shells and dried seaweed. The nose was full. The palate didn't disappoint, serving mesquite-smoked brisket, sugar snap peas and brine, with a big wintergreen and thyme burst at the end. Water introduced birch sap, smouldering logs and a herbaceous smoke on the nose. Light color almost clear, smelling it gets the nice medicinal iodine peat and some fruitiness.  It tastes juicy with a lot of fruit and sweetness as it coats my mouth. Then the smoke hits into a long-lasting finish. A hint of floral as well.
