Following reduction, the fruity aroma of ripe red apples arrived ahead of the scent of toasted almond flakes, rhubarb and fig crumble before a freshly brewed cup of rosehip and cranberry tea emerged. So did the taste - big and chewy, it was truly a gem, with plenty of oaky characters. We would even go as far as saying there were traces of that elusive flavour called rancio. The addition of water almost added to the intensity as we imagined walking through a spice market in the Middle East before we sat on a train in India and someone shouted “chai, chai, chai!” Following five years in an ex-bourbon hogshead, we transferred this whisky into a first fill Spanish oak oloroso hogshead.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eMembers\u003c\/strong\u003e\u003cstrong\u003e Note:\u003c\/strong\u003e\u003c\/span\u003e\u003cem\u003eMy immediate actions after the “OMG!” exclamation was to pull out my phone and \u003cu\u003eimmediately\u003c\/u\u003e order 2 more bottles of it (because I did NOT want this to be my last encounter with this particular elixir). It was light, fresh and full of raw ingredient qualities, we all agreed. With water we noted light sooty touches, plus crushed cereals, aspirin and dusty pollens on dried flowers. When neat, the palate conjured lots of caramelised oatmeal, buttered toast, distinctive flavours of sweet wort and mashy cereal notes. Once again, this was dominated by the natural ingredients.
