We found notes of beach bonfire ashes, wet beach pebbles and surf-tossed kelp. It was invigorating, with an emphatic coastal freshness and many impressions of seashore 'dross'. We also got a feeling of malt vinegar on hot oily chips with smoked sea salt. Water brought sharper notes of lemon juice, coastal herbs, dried seaweed crackers and green chilli. A brittle, ashy smokiness was also unearthed. The palate was thicker, fatter and oilier than anticipated. We had lots of impressions of anchovies and sardines in smoked olive oil and brine, plus mercurochrome and natural tar. On the palate, we threw a few peat slabs on the fire as our host delivered a platter of jamón ibérico with black olives. After a drop of water, we had a cup of lapsang souchong tea with a slightly burned scone and raspberry jam. To taste we were was back in the lodge, with Scottish black bun and Ecclefechan tarts. With water it became really expressive, with pecan pie, dark malt loaf, boozy tiramisu, walnut and coffee cake, and salted liquorice. There was a lovely gamey touch underneath all that as well. The palate when neat was laden with dark fruit cordials, aniseed, orange travel sweets, old fashioned cocktails and pipe tobacco. Reduction brought out a lovely flavour of dried exotic fruits, prunes, dates and dark fruit teas with hibiscus flower, leading to a wonderfully salty and drying aftertaste full of salted almonds and Iberico ham. This had a very chewy texture, with flavours of salted caramel, smoked salmon and sour cream bagel sandwiches as well as spicy quince and cranberry chutney. Following the addition of water, we found ourselves in a coffee shop in Amsterdam and ordered a chocolate fudge affogato – chocolatey fudge ice cream, sea-salted almonds and piping hot espresso. The reduced nose combined custard tarts, pears in syrup and dried mango with after-dinner mints, nettle patches and sea breezes over the machair. The neat palate offered a robust body and intense flavours; initially caramel sauce and fig jam sweetness, followed by considerable smoke, spice and saltiness (burnt toast, lapsang souchong tea and a beach bonfire clambake). With water the nose settled to maple bacon, smoked oysters, dried papaya and dying embers. Our overall impression was of a rich and indulgent nose, combining top-notes of butterscotch and vanilla custard with more savoury base notes of pata negra and Virginia tobacco. The palate, which had beautiful velvety textures, followed a similar journey from sweet forenoon (fruit tarts, warm honey) to a savoury, mouth-drying dusk, hinting at balsamic reduction and leather. We enjoyed the palate’s creamy texture and the sweet, savoury combination of maple-cured bacon and grilled pineapple; then a drying finish woven through with subtle threads of smoke and exotic spices. The reduced nose provoked astonishingly evocative scents of singed heather and distant campfires, new tennis balls, brine and petrichor (recent rain on dry ground).
