On the palate, a drying mouthfeel was a unanimous discovery, complemented by hazelnuts, peanuts, sweet red cola and tarry, brine-soaked driftwood. Water calmed this robust dram and revealed its soothing side. On the nose, our Panellists across the Pond found herbal remedies, ground coriander, smoked sea salt, mint leaf, smoked chilli and even memories of a new car’s leather interior. Yet on the palate it was the BBQ-charred meats and unmistakable maritime influence that lingered longest. The palate, when neat, was dominated by a show-stopping combination of baked oranges and wild strawberry on one hand, with more sunflower and walnut oil, bacon jam, medicinal herbs and old tonic wine on the other. A real \"mic drop\" experience. On the nose, water brought out brandy butter, boozy black forest gateau, beef extract and black olive tapenade – a definite sense of meatiness crept in. A little reduction brought oily mouth coating concoction of herbal extracts and gentle bitterness, soft medicinal impressions and spiciness in the form of black pepper, paprika. Scents of cherry liqueur, tobacco from a leather pouch and seaweed butter scraped on campfire rye bread toasts were all borne on the breeze. As we took a first sip, the \"red\" impression became stronger still, coming in waves of cherries in brandy, sweet figs, fried bacon and pink peppercorns on a rare steak in red wine sauce, all washed down with a smoky ginger wine. A drop of water brought forth more sea breeze carrying prunes, more figs, incense sticks, iodine, an old leather satchel and fruits of the forest sprinkled with a variety of herbs. On the palate, water arrived with a high tide of dark and red things: walnut-infused red wine, ox tail in sherry sauce, apple chutney, tamarind sauce, more iodine and sweet pipe tobacco.
