We think these 2nd fill casks are a real sweet spot for balance and it couldn’t be better exemplified than with this beautiful malt! On the nose, lime zest was woven into honeydew melon, joined by a puff of sherbet and the arrival of polished antique furniture. The palate was intense, full of waxy apples and pears, creamed coconut, quince paste and spiced witbier. A trickle of water pulled forward lime pastilles and elderflower as we walked into a botanical garden's hothouse. It is here we write our best stanzas. The palate was custard tart, cubes of Turkish delight and pears.\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eMembers Note:\u003c\/strong\u003e\u003c\/span\u003e \u003cem\u003eI was initially skeptical, because the \"Spicy and Sweet\" profile isn't usually my favorite but sipping it over time it really opens up to a more well balanced \"Deep Rich and Dried Fruit\" on the front palate and \"Old and Dignified\" on the finish... but still with that spicy note throughout. It was light, fresh and full of raw ingredient qualities, we all agreed. With water we noted light sooty touches, plus crushed cereals, aspirin and dusty pollens on dried flowers. When neat, the palate conjured lots of caramelised oatmeal, buttered toast, distinctive flavours of sweet wort and mashy cereal notes. Once again, this was dominated by the natural ingredients. With water we got more honeyed notes along with fruit flapjack, golden syrup sponge cake, cloudy lemonade and jam doughnuts – a wealth of delicious baked pastry and cake vibes. The neat palate opened with candied citrus rinds, sweet granola and vanilla ice cream, with wee hints of barley sugars and red chilli flakes adding warmth. Reduction brought honeysuckle, pine sap, freshly planed oak and a final extra drizzle of honey.
