The aroma was now very autumnal, transporting us to a truffle hunt, with mushroom foraging and picking blueberries. The taste took us back to the spaghetti bolognese, but now the hidden stars of the dish shone, as carrots, celery, onions and the perfect mix of spices and herbs came to the fore. Water released a cacophony of pleasing spices, the Amarone now mulling with fig syrup, cinnamon and oranges. So did the taste - big and chewy, it was truly a gem, with plenty of oaky characters. We would even go as far as saying there were traces of that elusive flavour called rancio. This was deep, rich, sophisticated. The palate was all of the above, increasingly rich and viscose as treacle collided with coal dust on a wood-fired pizza base. Water pulled out the cask's previous inhabitant even more, with dried grape and golden syrup joining mince pies on the nose. The palate was now full of sandalwood  and supremely sweet, woody and retaining that wintergreen from the start. A very clear salinity and a delectable dank note arrived right at the end.
