Initial notes included beach foam, exotic fruit juices, fragrant peat smoke drifting in coastal air, crushed sea shells, seaweed crackers and lychee. Reduction brought softer notes of coconut, seawater, eucalyptus, herbal medicines, kiln smoke, natural tar and smoked olive oil. The neat palate displayed a wonderfully soft, waxy and peaty quality, with notes of ozone, preserved lemons in brine, crystallised tropical fruits, grapefruit, mint leaf, mineral oils and charred lemons. Just gorgeous. The nose was full. The palate didn't disappoint, serving mesquite-smoked brisket, sugar snap peas and brine, with a big wintergreen and thyme burst at the end. Water introduced birch sap, smouldering logs and a herbaceous smoke on the nose. Light color almost clear, smelling it gets the nice medicinal iodine peat and some fruitiness.  It tastes juicy with a lot of fruit and sweetness as it coats my mouth. Then the smoke hits into a long-lasting finish. A hint of floral as well. We entered and a warm hug awaited us, while our dog was wagging its tail – we had arrived! With a drop of water, the aroma of skirt steak, chimichurri sauce and grilled lobster tails in a white wine sauce filled the room. It was chalky, ashy, briny and full of smoked mint, gorse flowers, hay and coastal freshness. Reduction brought slightly funkier tones of pickled gherkins, wet seaweed, shellfish, tar and ink. When neat, the palate was surely coastal and fresh. The Panel found sweet herbal peat smoke, smoked olive oil, charred lemons over hot coals and many detailed impressions of coastal flowers and beach pebble minerality. Some water thickened the peat smoke and made everything very easy and luxurious, as we sampled olive tapenades, yellow flowers, salted honey, aged meat and herbal touches of lemon thyme and wormwood. At eight years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further.
