Learn a little about our palates and perhaps a wee bit more about your own!\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003e\u003cspan style=\"mso-bidi-font-weight: bold;\"\u003eScott Brunow's Pick - Cask No. 53.468 Step forward, inhabitant\u003c\/span\u003e\u003c\/strong\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eI love sherry and I love peat. What I really love is when the two are combined into an exquisite combination of rich sweetness and savory peat. Welcome to 53.468, a 13-year-old peated Islay with a secondary maturation in a first fill Oloroso hogshead.  This is truly a mouthwatering beast of both decadent dessert and savory meatiness.  I feel like I’m sitting under a blanket, on a beach, at dusk, next to a fire every time I take a sip.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eBen Diedrich's Pick - Cask No. 16.94 Tanker fuego\u003c\/strong\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eAn absolute must-try for any peat lover: 'Tanker fuego' showcases the very best of the peated Highland style. Unlike peat cut from Islay, mainland peat offers a drier and softer variety of smoke. Just about all of this single malt goes into blended whiskies. Here, you have a full-bodied whisky of character and distinction available not just as a single malt, but a \u003ci\u003esingle cask\u003c\/i\u003e. Hot and spicy on the palate, chutney, stewed rhubarb and a cilantro lime chimichurri but all with plenty of Sichuan pepper! Water to the rescue and yes, it opened nicely with the scent of coconut pudding with lychee and mango salad followed by cinnamon-toasted oats appearing. A flavour-filled journey awaits…. just choose to step forward!\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eTasting Panel Note\u003c\/strong\u003e\u003c\/span\u003e: We snapped a piece of dark chocolate from within its golden foil prison, dropped it in caramel and stirred with wintergreen mint. This was deep, rich, sophisticated. The palate was all of the above, increasingly rich and viscose as treacle collided with coal dust on a wood-fired pizza base. Water pulled out the cask's previous inhabitant even more, with dried grape and golden syrup joining mince pies on the nose. The palate was now full of sandalwood  and supremely sweet, woody and retaining that wintergreen from the start. A very clear salinity and a delectable dank note arrived right at the end. The nose was big on salted caramel too. To taste, thyme and peanuts were joined by charred blackcurrants, rapeseed oil and a touch of chilli flakes.
