The heavily peated malt spent 5 years in bourbon cask and 5 years in Oloroso cask and the thing that strikes me is the BALANCE. Sherry and smoke intertwine perfectly for a beautiful sipping whisky. The aroma was now very autumnal, transporting us to a truffle hunt, with mushroom foraging and picking blueberries. The taste took us back to the spaghetti bolognese, but now the hidden stars of the dish shone, as carrots, celery, onions and the perfect mix of spices and herbs came to the fore. The telltale fruit richness from this distillery comes through on the finish for a lively and complex sipper. The nose was full. The palate didn't disappoint, serving mesquite-smoked brisket, sugar snap peas and brine, with a big wintergreen and thyme burst at the end. Water introduced birch sap, smouldering logs and a herbaceous smoke on the nose. The palate was sweeter now, and lighter in texture.\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eMembers Note: \u003c\/strong\u003e\u003c\/span\u003e\u003cstrong\u003e \u003c\/strong\u003e\u003cem\u003eAlways a sucker for cask strength distillery 53 and this one doesn’t disappoint. Light color almost clear, smelling it gets the nice medicinal iodine peat and some fruitiness.  It tastes juicy with a lot of fruit and sweetness as it coats my mouth. Then the smoke hits into a long-lasting finish. A hint of floral as well. We imagined a cosy cottage in a winter wonderland, a starlit night, a full moon and, after a long walk, the first thing we spotted was the smoke coming out of the chimney. We entered and a warm hug awaited us, while our dog was wagging its tail – we had arrived! With a drop of water, the aroma of skirt steak, chimichurri sauce and grilled lobster tails in a white wine sauce filled the room. After reduction a more classic profile emerged as we sat around a beach bonfire made with driftwood and peat slabs sipping a peaty John Collins cocktail. Smoke, smoke and more smoke!
