Wish a dash of water came burnt heather, lavender, and rhubarb crumble while liquorice and fennel seeds merged with melting butter on smoked kippers. Combine this with sea buckthorn cordial and buttered scones and you should have the picture. We felt we had stepped into Claude Monet’s painting ‘Woman with a Parasol’. Fun and frolics on the palate as we enjoyed a glass of pink champagne and honey-glazed melon balls as well as strawberries and cream. With a drop of water, a light wind carried the floral aromas from a nearby rose garden in full bloom as we savoured white peaches poached in sauternes. Delicious, elegant, delicate – simply sublime. A solitary grilled pineapple ring lurked in the background somewhere. With water we found soft wood spices, heather ales, treacle and fragrant sandalwood. The palate had a lovely up-front sweetness of raisins and sultanas, then sweet cough mixtures and cherry throat lozenges. This evolved towards richer notes of brown bread and treacle in due course. Water enhanced and complicated this sweetness to incorporate many dark fruit jams, aniseed sweets and dates stewed in old armagnac. The palate shifted from slightly astringent rhubarb tart, lemon zest and green grapes to chocolate pralines and sticky toffee pudding; finishing with pepper, balsamic and lime pickle. The reduced nose discovered new shoes and waxed saddles, lemon trees, cut grass and artists' studios. The juicy palate had fruit punch, cola cubes, apple sauce and honeysuckle – before a dry finish of oak, grain mustard and mace.
