The palate neat continued the foody theme with sweet, smoky marinated chicken wings and the iconic German street food, currywurst – a bratwurst with a sauce made from tomato purée, yellow curry powder, other spices, sugar and vinegar. After the addition of water, and all these foods, we needed a digestif of either a grappa or a fernet. In the finish, we rustled up a smoky version of a hanky panky cocktail by adding lapsang souchong tea. An ultra small batch created using two ex-bourbon hogheads, each transferred to second casks for additional maturation, this just may be  one of the most incredible whiskies we’ve seen from Distillery 53 to date. It’s got everything you’d want from a big and bold Islay spirit wrapped up in a warm blanket of PX sherry. The palate’s massive flavours included coal tar, ginger beer, smoked prunes, brine and chimney scrapings – but also pain aux raisins, heather honey and panettone bread and butter pudding. The reduced nose suggested dandelion and burdock, raisins macerated in birch tar liqueur, aubergine fritters and seaweed on lobster. The palate had crab and wakame salad with lemon thyme dressing, then black pepper and eucalyptus to finish. We’re so excited to share the first ever cask from Distillery 162..and what better time to release it than Festival season!  This peated island malt was matured in a Chinkapin oak barrel, which has created a profile unlike anything we’ve seen. \u003c\/em\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eTasting Panel Note\u003c\/strong\u003e\u003c\/span\u003e: The neat nose on this one immediately gave away a richly wood-influenced profile. Freshly smoked barley, beach bonfire smoke and Brunswick ham were all noted, along with smoked and peppered mackerel, wood char and smoked apple crisps. With reduction we detected a wee flash of carbolic acidity, then big ashy peat with impressions of lemons charring on a barbecue, damp straw bales in a shed, Arbroath smokie and wet kelp. The neat palate was clean and punchy with a pronounced smokiness, before sharper and fruitier components such as blood orange studded with clove, ginger, cinnamon and further notes of ham, seaweed and some rye bread spiciness.
