The palate initially brimmed with creosote, kerosene, black pepper and fermented fish. Then peppered mackerel, bandages, gloopy medical embrocations, oyster sauce and anchovy paste. With reduction we got a more vivacious exotic fruit vibe with mango, charred pineapple and passion fruit sours. The air carried an earthy funk with hazelnuts, pecans and bags of herbs and spices, while fragrant pipe tobacco mixed with mint tea and wood glue. With a dash of water, the mango and guava fruit ripened in the heat and combined with star anise, marzipan and coconut milk chocolate. The palate gave that initial satisfactory hit of juniper and coriander, then charred pineapple, chamomile, rosewater and lychee. Water added a light, citric sweetness, lemon sugar, rose petals and lime blossom. Adding water turned the nose to a slab of ripe pineapple wrapped in a tobacco leaf. The mouth was initially tarry and citric with a scoosh of pure WD40, carbolic acidity, fermented bean curds and black olive tapenade. Here we go again - liquorice, spice, black treacle and pineapple glazed ham, phenols, an old wooden sea chest and not to forget, washable colour glue available as Granny Smiths apple, banana mania yellow, mango tango pink and Pacific blue! The palate certainly did not lag behind with oily rags, an old metal toolbox, herbal cough mixture but also wave after wave of cherries, sugar cane and vanilla sweetness. The burning timbers we tried to douse with saltwater as the fragrant wood smoke engulfed the whole ship, yet we managed to get away. On the palate neat, a blackberry and Meyer lemon gin and tonic, using the much sweeter less acidic lemon with an intriguing spicy bergamot fragrant taste reminded us more of spice or herb. We also found candied oranges, coriander seeds and cumin. On the palate it was dry and spicy, which reminded some of mescal, that rich, earthy flavour mixed with freshly cut peppers but also tropical fruits. Water changed the earthiness into a sweetness found in gardening using grow bags, yet at the same time we smelled a pumpkin potpourri.
