It was light, fresh and full of raw ingredient qualities, we all agreed. With water we noted light sooty touches, plus crushed cereals, aspirin and dusty pollens on dried flowers. When neat, the palate conjured lots of caramelised oatmeal, buttered toast, distinctive flavours of sweet wort and mashy cereal notes. Once again, this was dominated by the natural ingredients. We imagined a cosy cottage in a winter wonderland, a starlit night, a full moon and, after a long walk, the first thing we spotted was the smoke coming out of the chimney. We entered and a warm hug awaited us, while our dog was wagging its tail – we had arrived! With a drop of water, the aroma of skirt steak, chimichurri sauce and grilled lobster tails in a white wine sauce filled the room. The nose majored on an array of fruits (banana, glacé cherries, sultanas, orange peel, lemon bonbons) bound together with the mellifluous sweetness of fudge, honeycomb and butterscotch.
