The resulting whisky has bags of character, wisps of smoke, and an abundance of honey. Reminiscent of \"old-school\" blends of the past, we thought. What witchcraft and molten japery is this? At least, that's what our raised eyebrows and throaty musings queried. Surely this dram was much older and much more 'old style' that it had a right to be? We detected deep and enticing notes of soft, heathery peat smoke. Then encroaching medicinal charms, pine wood, camphor, cooling bonfire embers and tendrils of seaweed! Water dialed up the charm vibes to 'Roger Moore': elegant wood smoke, fragrant phenolics, old herbal and tar liqueurs and a kiss of cask-aged mead. The palate was decadently rich and mouthcoating, yet warming and gentle. Its rich herbal character mingled with more medicines, dried mint, mineral oils and fatty sheep wool oils. One Panellist remarked that there was a lovely wee \"earthy potting shed\" vibe going on. The neat palate was very oily, robust and fulsome, with lots of toasted cereals, fruity trail mix, pumpkinseed oil and rye bread spice. We detected loads of chunky notes such as herbal tonic wines, cedar wood, blood orange, orange muscat wine, pine wood, tarragon and toasted fennel seed. A massive and characterful whisky. With water the nose became superbly peppery, warming and bristling with unlit cigars in a humidor, crystallised exotic and dark fruits, herbal liqueurs and flower honey. The neat palate was drenched in waxes, old mead, warm brownies, loads of old-school rancio sherry vibes, more dried exotic fruits, plums and dates soaking in armagnac, and more pipe tobacco and sultanas. With reduction we got walnut wine, herbal bitters, herbes de Provence and a persistently vivid and old-school sherry richness, dominated by rancio, game meats, earthy heft and mineral sharpness. To taste, we sipped vermouth from Italy, with the addition of a splash of soda and a slice of lemon, served with a bowl of whole, ground and roasted almonds. Adding water, orange blossom and peppermint cordial came to the fore before pink peppercorns and white chocolate mice appeared. The palate transported the Panel to a lunch with the team from SMWS Japan, where we enjoyed tempura freshwater eel from a bar in Meguro-ku, Tokyo. Grilled halloumi followed, as did a glass of mojito and salt liquorice from Norway. Water took our noses to an artisan calligraphy ink shop, with everything wrapped in wax paper, where bowls of steamed rice sat topped with chunks of glistening coal. Water brightened the nose to new car interiors, sunshine through a hay loft, vanilla pods and Danish plum and marzipan chocolates. The palate became sweeter and more refined – apple and lime jelly beans, sparkling white grape juice and chocolate oaty biscuits dipped in brandy; with sugar-coated fennel seeds and peshwari naan later.
