The floral notes serenaded prawns and lobster as they sizzled on a beach barbecue, while toasted brioche buns patiently awaited their arrival. With a little water, delightful textures appeared as miso paste, butter and salted caramel blended into fig ice cream. Now, the soft leather of vintage car seats sang a chorus in unison with cured ham, lamb chops and dried seaweed. The grand finale delivered an exotic ballad that brought together baba ganoush, tahini and lavender sumac on grilled aubergines.

With a last few sips of earl grey tea and fruity boiled sweets packed in the bag, we were all set. The air carried wafts from the pineapple pinnacle as we navigated seemingly endless boulder fields of mangos and coconuts. Reaching the start of the climb we paused for a coffee with a dusting of cocoa powder and a cheeky cream cake. With a dash of water we began scaling the steep sides of the pineapple, searching for handholds on rocks of ginger, red apples and pink grapefruit. On we climbed, high above the summer meadows and pine trees until we reached the top, celebrating with buttered fruit scones and blackcurrant jam.

There we were, relaxing on comfortable sofas in a hookah lounge, unwinding while we smoked a shisha with lemon cake-seasoned tobacco and drank a cup of Japanese peach iced tea. The taste was more like a glass of picpoul wine from southern France, mouth-wateringly crisp and refreshing with flavours of citrus, green apple and acacia blossom. Following the addition of water, we prepared a lemon drop martini with vodka, triple sec, lemon juice and sugar syrup. A prawn and avocado platter with lime and chilli dressing followed before, in the finish, we tucked into a slice of baked limoncello cheesecake and chocolate-dipped kiwi slices.

There was plenty of smoke here but not of the peaty variety – as if we were stoking the fire on a steam locomotive, mingled with the distinctive mechanical, oily, dusty and dirty smell of the driver’s cab. Very sooty on the palate, we felt like coal miners after working down the pit, enjoying eating a fudge doughnut held in our blackened hands. Water added the woody smoke of smouldering oak shavings next to sardines in a spicy tomato sauce, olives stuffed with anchovies and crispy fried sage leaves. To taste, we had caramelised brown sugar and cinnamon-grilled pineapple with a creamy chipotle sauce. Behind that, we noted a richness of camphor and some sweet digestive biscuits. Water brought a more mentholated quality, with lovely waxiness, herbal liqueur hints and impressions of aged honey-whisky liqueur. The palate displayed orange bitters, camphor and fir resins along the waxy and textural lines the nose had suggested. We also found treacle, game meats, natural tar and aged bas-armagnac. Water made everything superbly waxy and honeyed. A very rich profile emerged, with lovely detailing of spices, camphor, wood resins, aged teas and treacle cake. After reduction, toasted muesli with raisins, Greek-style honey yoghurt and a summer berry Eton mess were followed by rice pudding arancini with rosehip syrup, almonds and white chocolate cream. Water revealed further elements of cooking oils, hessian, flower honey and cupboard spices. The palate was elegantly chocolatey, with big impressions of fresh espresso, youthful calvados, a cider apple tang, spiced honey cake and some hints of lanolin and waxiness. Water enhanced the textural mouthfeel and rounded out the spiciness nicely, adding in more notes of honeys and waxes, along with dark beers and menthol tobacco. The result is a curiosity dram, slightly bonkers, but forgivably so. The nose combined herbal barbecue smoke, cinnamon toast and pigs in blankets, with oily rags and tar. The palate evoked smoky bacon crisps, peanut butter, soy sauce, cheroots and tarry driftwood – dry and grubby (in a good way). The reduced nose suggested campfire-grilled Italian fennel sausage, sardines and crab, with a creamy, malty bedtime drink to follow.
