The nose gave us pecan pie, peaches, prunes and vanilla, coffee with chicory and tobacco bales in a Spanish galleon's hold. A sumptuous mouth-feel preceded flavours of dark chocolate, fruit cake, brandy-soaked raisins, soft brown sugar and hot cross buns. In reduction the nose discovered caramel logs, treacle, cask char, roasted chestnuts and singed orange. The impactful palate combined blackcurrant jelly and rhubarb pie with dark chocolate, grated coconut and spun sugar; then iced gingerbread, black pepper, aniseed, clove and wine-stained oak produced a wave of spice. The reduced nose mingled the sweet and citric notes of chocolate limes, lemon cheesecake and orange liqueur. The palate, with chocolate brownies, espresso, rose Turkish delight and a dry, nutty, wine-leather finish, seemed the perfect armchair dram. An ultra small batch created using two ex-bourbon hogheads, each transferred to second casks for additional maturation, this just may be  one of the most incredible whiskies we’ve seen from Distillery 53 to date. It’s got everything you’d want from a big and bold Islay spirit wrapped up in a warm blanket of PX sherry. The palate’s massive flavours included coal tar, ginger beer, smoked prunes, brine and chimney scrapings – but also pain aux raisins, heather honey and panettone bread and butter pudding. The reduced nose suggested dandelion and burdock, raisins macerated in birch tar liqueur, aubergine fritters and seaweed on lobster. The palate had crab and wakame salad with lemon thyme dressing, then black pepper and eucalyptus to finish. When neat, the palate opened with a two-hander of lemon sharpness and chilli warmth. Then it evolved towards dried cherry with peppery and earthy undertones. In the background there were wee notes of dried mango and pomegranate. On the palate, the succulent nuttiness combined with lavender-smoked heather honey, blow-torched mackerel with blini and warm pickled beetroot to send our taste buds heavenwards. With a drop of water we were transported to a Middle Eastern fruit market where we enjoyed a traditional Berber tea made with cinnamon bark, cardamom, dry nutmeg flowers, spearmint and star anise. This is one of those. The nose combined clover honey and heather flowers with bonfire embers, seared padron peppers and barbecued shellfish. The palate’s intense, fiery whack of perfumed smoke, burnt lavender and woodfire ash also suggested lime, vanilla, cumin and pungent oak. On the reduced nose, we gathered driftwood from a rocky shore, toasted marshmallows on the fire and enjoyed stargazy pie with pumpernickel bread. The palate had burnt toast, chalk and tulips, olive oil cake and salty margaritas.
