It also felt like your mum had just opened a jar full of sweets and you could only pick one. To taste, this was the choice we had to make: wine gums, sugared jelly babies or sugared candy gingersnap cookies, as well as bubblegum with mint and fruit. Following reduction we discovered white truffles, white roses and Turkish delight next to a glass of demi-sec champagne. With water it maintained this sharp and salty balance, but added in notes of salted peanuts, seawater, grapefruit and charred pineapple. The neat palate was superbly clean, sharp and pristinely peaty, with a big streak of medicine in the form of bandages and ointments. With water it got surprisingly waxier in texture, along with a 'farmier' profile and a broader, richer peat flavour. In the main, the neat palate was fruity – brambles, yellow plums, golden sultanas, rum and raisin ice cream – but the finish was complex and enigmatic, with suggestions of forest floor, spearmint and chilli rice crackers. That enigma continued on the reduced nose – chocolate honeycomb bars, apricot danish and meringues; fine-cut rolling tobacco (blending Virginia, burley, and oriental tobaccos), talc and toasted oak. Following the addition of water, we found ourselves in a coffee shop in Amsterdam and ordered a chocolate fudge affogato – chocolatey fudge ice cream, sea-salted almonds and piping hot espresso. Some water made it broader, more aromatic and richer, with many more dark fruits, pickled ginger, balsamic glaze and a dense, rich, earthy note. The neat palate displayed more wood spices, more ginger, some nibbling tannin, herbal liqueurs, woodruff tea, grapefruit and a nice tinge of rancio. Water really drilled into the leathery, gamey and delicately minty qualities, delivering black truffle, game salami, shilling ales and bramble cordial. This was superbly earthy, leathery and with drying sherry in the aftertaste. A zingy sweetness at first on the palate – like a sip of cinnamon, clove and lemon tea – before a smooth, sweet creaminess with notes of banana, toffee and, again, cloves reminded some of us of a German wheat beer. Following reduction, vanilla notes in the form of ice cream and a sponge cake appeared before deeper expressions of clover honey, wood polish and pine trees developed. On the palate there were spiced banana chocolate sundaes as well as spiced banana and walnut pies. Following careful reduction, a refreshing peppermint tea was served at first before we discovered coconut and lime jellies and lemon verbena ice cream over poached pears. Water added a ‘dirty’ aspect on the nose, with tarry ropes, engine oil and hot pistons, before we got all cleaned up with carbolic soap. On the palate, we tried an alternative to foie gras: smoked cod liver in its own oil, smooth and pâté like, and not at all like a dose of cod liver oil. The nose was full of figs, raisins, fruit leathers, apricots and dried mango, plus Dundee cake, sherry trifle and bodegas. The palate – wow! – bakewell tart and boozy trifle, fig rolls, dark chocolate and sugared almonds, with a touch of Iberico pork or game pie; making it big and boisterous, but friendly.
