On the palate, a sticky sweet maple pecan danish, runny honey and candy floss before we had Danish ‘wasp stings chilli liquorice’– sweet on the outside with an intense chilli centre. Following reduction we still plenty of fruity aromas, such as cherry chocolates and homemade strawberry wine, but also the scent of sandalwood and tonka beans. A soft, fluffy and chewy mouthfeel awaited us with flavours of chocolate-coated orange sponge cakes, jelly babies and iced gems. At two years of age, we combined selected casks from the same distillery into a variety of different casks to develop further. On the palate, even more smoke, as the neighbour started another open fire using damp turf and moss to grill peppered mackerel with soy, lime and ginger. Following reduction we thought it was like a peat reek in a bothy, with smoked paprika, chargrilled lobster meat and a whiff of medical ointments. Adding water released fragrant wood smoke and suggestions of medicinal cream by the seaside, with maple syrup on smoky bacon and singed currants on charcoal. Much like our Society members from around the world, each of these international single malts has a unique story to tell.\u003c\/p\u003e\n\u003cp\u003eWe start with \u003cstrong\u003eCask No. 128.27 Wasp stings \u003c\/strong\u003efor an exhilarating expression from Wales. 128.27 was a product of the marriage of several ex-bourbon casks at 2 years of age into a 1\u003csup\u003est\u003c\/sup\u003e fill Moscatel butt. The sweetness and richness imparted on 6 years in this dessert wine cask is evident – sweet pastries, cakes, jams and chocolates send us down a decadent rabbit hole of flavour. Another stunner from a beautiful distillery known for creativity if not eccentricity!\u003c\/p\u003e\n\u003cp\u003eAlso celebrated this month is Saint George’s Day (April 23\u003csup\u003erd\u003c\/sup\u003e) in honor of England’s patron saint. This eponymous distillery seems to be the perfect place to source a peated whisky. Distillery 137 has been producing English malt for fifteen years and has quickly created a cult-like following, especially for peated malts, like this one, at a whopping 60ppm! \u003cstrong\u003eCask No. 137.15 Wafts of smoke\u003c\/strong\u003e will impress peat lovers with a smoky, meaty show of peat reek you won’t soon forget. Accents of smoked fish and ginger spice creep in but it’s mostly smoke, smoke and much more smoke!\u003c\/p\u003e\n\u003cp\u003eLet’s head far to the east for \u003cstrong\u003eCask No. 138.17 All the good things\u003c\/strong\u003e and a brilliant finale to our international adventure. The tropical environment of Taiwan creates whiskies of intensity and integration that any peat lover is bound to fall in love with. This particular dram draws on the meaty richness of mainland peat and the medicinal salinity of island peat.
