Adding water brought dried fruits, spun sugar and Viennese coffee with fig to the nose. After reduction a sweet mineral note emerged, like salt-roasted candied peanuts or stewed apples with maple syrup and salted butter. On the palate, we still sat in the shade by the sea but were now eating melon wrapped in parma ham. With water it revealed a more playful side, delivering honeycomb, lemon meringue pie and assorted candied nuts and citrus peels. Some sweet mint julep cocktail notes and cough syrups were also detected. Dilution delivered sticky toffee pudding with a mai tai cocktail of rum, orange curaçao, fresh lime juice and almond syrup. To taste, we tucked into chocolate rice crispy cakes and coconut almond macaroons. With water we found that it opened up and revealed lovely aromatic notes of sea greens, white flowers, chalky beach pebbles and mineral salts. The neat palate was immediately big and assertively powerful. It was also very oily in texture, with lots of sunflower and mineral elements, coastal vibrancy, waxiness and an increasing salinity. With water we got a tinge of cider apple funkiness, more mixed salted nuts and more of those fantastic salty and mineral qualities. Some medicinal notes and gorse flowers too. With water, the nose suggested boatyard workers heading to a harbour-side café for lunch.
