Creamy notes unfolded as the mango found its way into a lassi, and flaky filo pastry encased luscious elderflower ice cream. Water guided the mango to one side, allowing poached plums, chocolate orange and muscat dessert wine to come to the fore. The flavours had taken a tropical turn, welcoming an influx of soft nectarine, mango and toasted pineapple.
