These were followed swiftly by pickled balsamic onions, orange oils, lime zest and marmalade with coriander seed. Reduction brought out butterscotch, gorse flower, green mango and assorted fruit salad 'juicy dregs'. Some impressions of mixed sweeties were also detected. The neat palate opened with whipped cream, blackcurrant jam, buttered scone and toffee sauce. Water revealed stem ginger in syrup, plum skin, maple syrup and classical old fashioned cocktail notes with drying wood spices. As the whisky opened up it grew deeper and more complex, revealing hints of liquorice, black tea and a rich blackberry reduction. On the palate, those darker notes lingered, joined by muscovado sugar, sweet liquorice chews, a smoky barbecue and a touch of plum sauce. A splash of water brought warmth and familiarity, evoking memories of toffee apples, juicy orange wedges and subtle whispers of aniseed and sweet vermouth. To finish, the Panel noted an indulgent parade of dessert favourites: layered gâteaux, chocolate mousse topped with toasted nuts and a gentle dusting of warming spices. Water gave both the nose and palate accents of custard, toffee apple and orange sherbet. The finish was caramel and oak in Viennese coffee.
