With time came hints of wood char alongside coffee beans, wood spices and toasted rye bread. A dash of water enhanced the wood with aromas of pine forests, charred oak and dunnage warehouses. The reduced nose combines vanilla ice-cream with violet and kiwi fruit with foamy bananas – and a visit to the barbers (razor strop leather, hair oil, aftershave). We don’t see many Young \u0026amp; Spritely casks too often, so I am always thrilled to dive into these casks that live up to their name!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCask No. 78.49 I hope you like jamming too! \u003c\/strong\u003eis a U.S. exclusive cask hailing from a Highland distillery known for their big, robust and meaty profiles! The nose bursts with bold notes of bergamot tea, rose water, and roasted almonds. The viscosity shows on the nose and follows through right onto the palate! Charred pine, tobaccos and earth notes of damp forest floor bring nothing but pure bliss on the palate! A whisky worth dramming and jamming to!\u003c\/p\u003e\n\u003cp\u003eWhile single malt is at the heart of what we do, we never stray away from an opportunity to highlight the absolute magic of single grain whisky, especially from a Lowland distillery with such a history! Whiskey-peach cobbler out of a new leather boot, with notes of honeysuckle and horse grain just encompass my nostrils! The palate, rich and dense (thanks to that #3 charred hogshead) with sticky toffee cake and fresh stone fruit in a tack room make this one absolutely stunning dram. I will very much be enjoying this Sweet Fruity and Mellow gem on sunny afternoons this Summer!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCask No. 89.17 Keep nosing\u003c\/strong\u003e was given the perfect name.... you won't want to take your nose out of the glass! This 9-year-old Speysider in 2nd fill ex-bourbon is a bouquet of aromas, with fresh herbs, tea leaves and a floral-tobacco whipped cream! At 67.5 percent, this comes through with big bold butterscotch candies (the kind you’d get from your grandmum) and fresh mint leaves. This would make the perfect digestif with friends after a Summer night’s meal, as it’s not only a conversation piece, but a perfectly sweet one at that!\u003c\/p\u003e\n\u003cp\u003eI tend to gravitate more towards peated drams in the summertime than the winter, as they make fantastic accompaniments to grilled Summer meals and campfire conversations. \u003cstrong\u003eCask No. 108.51 From the seaside to the A\u0026amp;E side \u003c\/strong\u003eadds just a little more than that with its heavy dose of medical twang! The nose is a seaside seafood fest at a hospital, salty, yet fresh with herbs and citrus! The palate rings true, with saltfish, bright lemon zest and parsley straight from the garden! And on the finish comes that medical iodine note that makes it all the more special! I hope my whisky bottles don’t fall off the shelf and shatter,” before I worry about my safety.   At any rate, the sun is finally peeking out, flowers are in full bloom, and I’m pumped to drink!  I’m excited to share a selection of hidden gems with you! \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCask No. 4.303 A Nocturne Sipper\u003c\/strong\u003e is a fabulous 16-year-old whisky that is garnished with heather smoke and black peppercorn spices.   The first 14 years of its maturation is aged in a bourbon hogshead, which delivers notes of caramel and stewed oranges. This adds a wonderful, textural element on the palate, giving a viscous touch to the tongue.   Burnt sugar lingers whilst top notes of prosciutto lying on a bed of charcuterie goodness adds a savoury element to counteract the sweetness.   One can detect the influence of the first-fill, Oloroso STR cask as well.  Dark cherries and dark chocolate emerge when the whisky settles in the glass.  There’s also a touch of goat cheese here to create dimension, interest and intrigue to this dram.  This is an exceptional whisky worth exploring.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCask No. 28.84 Let’s Get It Started\u003c\/strong\u003e is a festive whisky that initially captures carnival -like treats in a glass!  Notes of candied apples and vanilla dance on the tongue, whilst crushed almonds covered in toffee offer a confectionary dream on the tastebuds! The influence of the first-fill, ex-bourbon cask offers characteristics of toasted coconut, key lime pie and butter drizzled on honey graham crackers.   Hints of chai tea envelope the palate and leaves traces of oak and Opéra cake on the finish.   With water, a dash of pepper and pomelo enraptures this dram and adds zest on the tongue.  This is truly a fun 9-year-old dram!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCask No 85.79 Balanced and Textured\u003c\/strong\u003e is a remarkable whisky that’s aged in a 1st-fill, ex-bourbon cask for 12 years before being transferred to a 2nd-fill, sauternes cask for 2 years.  A candy shop explosion of milk chocolate coats the tongue whilst top notes of almond skins and turmeric offer layers and depth to this spirit.
