Experimentation over the next 15 years led them to a distillery overhaul and technical guidance from the late great Dr. Jim Swan. By 2012, their style and vision matched their ambition to craft Breton single malt inspired by the Highlands. Today’s \u003cb\u003eCask No. 157.1 Roasty, toasty and oaky \u003c\/b\u003ewas aged all 8 years in a 1\u003csup\u003est\u003c\/sup\u003e fill Oloroso butt. The distillery’s style of fruit-forward malt possessing weight and oily texture bodes well for maturation in this type of highly active sherry-seasoned cask. On the neat palate, we sipped a cup of oolong tea with that typical brown sugar sweetness, as well as toasty, roasty and oaky flavours, with a finish of melon jam with vanilla and lime. When we carefully added water, the nose turned into chocolate-and-yoghurt-coated raisins, candied orange slices and freeze-dried strawberries.
