Wafts of heather smoke billowed from deep below, bringing aromas of grilled pork chops, oregano and samphire sautéed in salted butter. Venturing deeper we uncovered cherries being washed along in a stream of pinot noir wine. Our faces were blackened with cocoa powder and coal dust. A dash of water released walnuts infused in rich sherry, and scatterings of orange peel on smoked salmon canapés. Our mouths were coated with a sticky mix of chimney soot and honey by the time we discovered smoked bacon, glazed sausages and praline-filled barnacle shells. At 19 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. We detected loads of chunky notes such as herbal tonic wines, cedar wood, blood orange, orange muscat wine, pine wood, tarragon and toasted fennel seed. A massive and characterful whisky. With water the nose became superbly peppery, warming and bristling with unlit cigars in a humidor, crystallised exotic and dark fruits, herbal liqueurs and flower honey. The neat palate was drenched in waxes, old mead, warm brownies, loads of old-school rancio sherry vibes, more dried exotic fruits, plums and dates soaking in armagnac, and more pipe tobacco and sultanas. With reduction we got walnut wine, herbal bitters, herbes de Provence and a persistently vivid and old-school sherry richness, dominated by rancio, game meats, earthy heft and mineral sharpness. A zingy sweetness at first on the palate – like a sip of cinnamon, clove and lemon tea – before a smooth, sweet creaminess with notes of banana, toffee and, again, cloves reminded some of us of a German wheat beer. Following reduction, vanilla notes in the form of ice cream and a sponge cake appeared before deeper expressions of clover honey, wood polish and pine trees developed. Pure filth! Proper hefty peat! These were only a couple of the expressions nosing neat. Just in case you start to wonder, we all loved it. Imagine yourself standing on the barley when the kiln is fired with peat. There was plenty of smoke on the palate, but maybe not as much as the nose suggested. A lovely redeeming sweetness of dark caramel and chocolate-coated brazil nuts balanced the peat smoke perfectly. Water added a more maritime character in the form of salty sea water, prawns in a smoky mary rose sauce, and hot-smoked salmon. The taste was of salty oysters with smoked-clam-and-tomato juice. The palate gave us dark chilli chocolate, a nutty cinnamon topping on plum and damson crumble,  (spiced currant) 'fly pie', manuka honey and five-spice roast pork. Water brightened the nose to new car interiors, sunshine through a hay loft, vanilla pods and Danish plum and marzipan chocolates. The palate became sweeter and more refined – apple and lime jelly beans, sparkling white grape juice and chocolate oaty biscuits dipped in brandy; with sugar-coated fennel seeds and peshwari naan later.
