A few drops of water released blackcurrant fruit and cherry liqueur topped with coconut shavings, as green leafy aromas merged with turmeric and hints of new textiles. Textures had become oily and viscous, with juniper berries and toasted pine nuts. Then, going deeper, we found it gathered complexity with suggestions of smoked olive oil, tarred rope, creel nets and wet beach kelp. Gorgeous! Water brought out big notes of boiler and puffer smoke, eucalyptus oil, more iodine, more antiseptic and more peat. The neat palate opened like taking a big swally of cask-strength German rauchbier, plus some chunks of barbecue-charred pineapple, pure tar extracts and briny olive pickling juices. Some water gave us preserved lemons, herbal ointments, soy sauce, bonfire embers and cornichons dashed on wet beach rocks – like a hyper-real version of this famous Islay distillery. Water added a vegetal aspect evoking tomato vines in a greenhouse, clay plant pots, a leather tobacco pouch and hints of liquorice and cocoa powder. The neat palate dazzled with similar complexity - lots of myrtle, spiced lemon marmalade, orange cocktail bitters, shoe leather, coal tar soap and gentle red chilli heat. With reduction there was more gentle vanilla cream soda sweetness, strawberry jam, molten liquorice, green ginger wine, herbal bitters and date molasses. Tart aromas of apples and quince jelly mingled with dried mango, cola-flavoured sweets and the dust of an old fruit cellar. Antique glass sweetie jars were crammed with cherry lips, crumbling chalky lovehearts and fizzy sherbet chews flavoured with violets. After adding a small dash of water our attention was drawn to an old tea chest in the corner. Sitting on top was a vase of geraniums, while we found a stash of apple tobacco and tea tree oil inside.
