Our overall impression was of a rich and indulgent nose, combining top-notes of butterscotch and vanilla custard with more savoury base notes of pata negra and Virginia tobacco. The palate, which had beautiful velvety textures, followed a similar journey from sweet forenoon (fruit tarts, warm honey) to a savoury, mouth-drying dusk, hinting at balsamic reduction and leather. Water gave us kiln-dried firewood on the nose, joined by green apple, sugar snap peas and cinnamon honey. The palate finished with toasted raisins and treacle stirred into warm custard. Water gave us vintage brandy and fried plantain on the nose, while the palate was nutty chocolate and candied bacon topped with lychee and fig jelly.
