Springtime in a bottle awaits! Situated on the northernmost whisky-producing island in Scotland, \u003cstrong\u003eDistillery #4\u003c\/strong\u003e is known for using locally cut peat mixed with heather to produce a robust and earthy spirit with a thin veil of smoke. There is a \u003cstrong\u003egentler style of smokiness\u003c\/strong\u003e produced here that has become a gateway for many whisky lovers who are intrigued by peat smoke but not yet ready to tackle the bold and aggressive style of whisky produced by distillers further south. There is also the ability to produce rather intensely smokey malts for those peat lovers who crave a stronger appeal. The \u003cstrong\u003ecoastal influence\u003c\/strong\u003e in each cask adds yet another layer of complexity to the malts produced here. Many connoisseurs consider the malts of Distillery #4 to be the most well-rounded in the world!\u003c\/p\u003e\n\u003cp\u003eSome of our distillery dives focus on maturation in different casks. Today, we take a different approach by examining whiskies after maturation in \u003cem\u003ethe same type of cask\u003c\/em\u003e. Our dashing duo of single malts featured today were both distilled on January 28\u003csup\u003eth\u003c\/sup\u003e, 2008. After \u003cstrong\u003e9 years of aging in ex-bourbon hogsheads\u003c\/strong\u003e, they were vatted (married together) and ‘re-casked’ for \u003cstrong\u003e4 years of additional maturation in separate first-fill ex-bourbon barrels\u003c\/strong\u003e. The resultant whiskies will transport your senses across the Atlantic! \u003cstrong\u003eCask No. 4.314 Sitting in the sauna \u003c\/strong\u003eis the more robust of the pair with the terribly fun nose of sushi and burning herb bushes. Sweet and salty aromas and flavours, ex-bourbon barrel vanilla notes and that beautiful Orkney peat combine to offer up an intensely satisfying springtime sipper. \u003cstrong\u003eCask No. 4.315 No vikings need apply \u003c\/strong\u003edons the “Oily \u0026amp; Coastal” flavour profile and delivers much more oceanic appeal, combining notes of dried seaweed, briny seawater, ashy smoke and much more. There was thyme, lemongrass, indeed a whole potpourri was on fire and the only thing we could do was dowse it with a bottle of Pouilly-Fume Sauvignon Blanc from the Loire valley. Reduction gave us more smoke, more floral and sweet aromas and on the palate, have you ever heard of coconut bacon which is made with coconut flakes mixed with salt and spices and baked in the oven? Wind-lashed harbours, pebble beaches, sand and seaweed crackers. Reduction offered us wintergreen and other medicinal herbs. Citrus scented candles, lime oil, creel nets and crushed aspirin. The palate displayed an easy, silky mouthfeel with notes of smoked limoncello, seawater, olives in pickling brine, sardines in olive oil and iodine drops. With water we got hessian, throat lozenges, Bonjella, aniseed and hints of camphor. At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. A faint waxiness evolved in the background with time. Classical and very enchanting we agreed. With water we found notes of salted butter, tarragon, miso and umami Scotch broth with pearl barley. Touches of smoked oatmeal and hessian too. The palate showed a more prominent peaty flavour, with robust oily textures, coastal freshness and a lovely rooty, herbal and medical vibe. Reduction brought a big, emphatic peaty quality, also some malt vinegar, lemon cough drops, tar and anchovy paste. At 9 years of age, we combined selected casks from the same distillery.
