Certainly, the most fascinating aspect of Distillery #5 lies in their decision to triple distill all their single malts. This third distillation creates a pure and delicate newmake with sweet citrus and malt notes. This delicacy demands excellent cask management, and just about all of this whisky is aged in first-fill ex-bourbon barrels. The bourbon barrel provides structure, sweetness and spice without overpowering the nuances of the make. Fruit syrup sweetness laced the tongue along with sherry trifle and Mānuka honey before bitter orange and oak tannins joined the herbal influence of dry vermouth. The sweetness receded slightly with water to allow orange, lemon and lime to combine with pencil shavings and banana skin on a bed of crushed walnuts. Meanwhile green notes drifted over fresh tarragon, thyme and basil as green leaves fell from lemon trees. On the palate a juicy start of strawberry sherbet combined with ginger spice before hard toffee stood aside for lime marmalade, fresh herbs and eventually green bell pepper. Water emphasised the green notes, now portraying cut grass, green banana and hard mango. Oranges and lemons merged with honey and pine on the tongue.
