There is a \u003cstrong data-mce-fragment=\"1\"\u003egentler style of smokiness\u003c\/strong\u003e produced here that has become a gateway for many whisky lovers who are intrigued by peat smoke but not yet ready to tackle the bold and aggressive style of whisky produced by distillers further south. There is also the ability to produce rather intensely smokey malts for those peat lovers who crave a stronger appeal. The \u003cstrong data-mce-fragment=\"1\"\u003ecoastal influence\u003c\/strong\u003e in each cask adds yet another layer of complexity to the malts produced here. Many connoisseurs consider the malts of Distillery #4 to be the most well-rounded in the world!\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eOur past distillery dives focused on maturation in different casks. Today, we take a slightly different approach by examining whiskies after maturation in \u003cem data-mce-fragment=\"1\"\u003ethe same type of cask\u003c\/em\u003e. Our single malts featured today were all distilled on January 28\u003csup data-mce-fragment=\"1\"\u003eth\u003c\/sup\u003e, 2008. After \u003cstrong data-mce-fragment=\"1\"\u003e9 years of aging in ex-bourbon hogsheads\u003c\/strong\u003e, they were vatted (married together) and ‘re-casked’ for \u003cstrong data-mce-fragment=\"1\"\u003e4 years of additional maturation in separate first-fill ex-bourbon barrels\u003c\/strong\u003e. The resultant whiskies will transport your senses across the Atlantic! \u003cstrong data-mce-fragment=\"1\"\u003eCask No. 4.298 I see seashore\u003c\/strong\u003e dons the “Oily \u0026amp; Coastal” flavour profile, combining notes of dried seaweed and salty sea air with jasmine tea, smoked oysters and lemon meringue pie. Another note that screams ‘Distillery #4!’ is heather and honey, a classic flavour to pick up on. On the tongue a wave of wasabi spice washed over sticky honey, quince jelly and lemon meringue pie while dried herbs and toasted chestnuts joined lapsang souchong tea. Water released more smoky characters from beach bonfires, singed coconut and smoked salmon. Sweet and creamy vanilla then merged with oily brazil nuts before we returned to dried seaweed, sushi and dark soya sauce. In 2017 we combined selected hogsheads before returning the single malt to a variety of different casks to develop further. Unusually peated and powerful - even for this old Orcadian Viking! Water made it sharper, more bready, yeasty and directly on lemon juice. The palate displayed an immediate wealth of camphor and tarry peat. Chalky notes, beach pebbles, seawater, olive oil and gauze. Reduction brought herbal cough medicines, smoked teas, aniseed liqueur and beach bonfire smoke. Wonderful and evocative whisky. At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks. Certainly, the most fascinating aspect of Distillery #5 lies in their decision to triple distill all their single malts. This third distillation creates a pure and delicate newmake with sweet citrus and malt notes. This delicacy demands excellent cask management, and just about all of this whisky is aged in first-fill ex-bourbon barrels. The bourbon barrel provides structure, sweetness and spice without overpowering the nuances of the make. Let’s discover just what nuances await as we \u003cstrong\u003eexamine two casks distilled on the same day and both aged 18 years in first-fill ex-bourbon barrels\u003c\/strong\u003e. \u003cstrong\u003eCask No. 5.89 Shaken not stirred\u003c\/strong\u003e presents rich fruits, vanilla and honey on the nose and palate whilst citrus and oak tannin provide the verve and intensity we seek in a dram. \u003cstrong\u003eCask No. 5.90 Luscious greenery\u003c\/strong\u003e starts with a similar aromatic delivery of sweets, but more chocolate than vanilla. The palate neat (and reduced) then shifts gears to an herbal expression sporting fresh grass, underripe banana and fresh herbs. Ripe tropical notes and accents of citrus and honey balance out the palate in a delightfully playful and complex malt.
