Our latest Distillery Dive highlights a trio of sensational malts from an all-time member favourite and jewel of the Speyside. Let’s dive into this flight of single malts that exemplify the importance of cask maturation.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eIn October of 2018, SMWS spirit manager Euan Campbell identified a \u003cstrong data-mce-fragment=\"1\"\u003ehandful of casks from Distillery #24 that had been aged in Oloroso sherry butts for 10 years\u003c\/strong\u003e. He decided this collection of whisky had a different destiny than the usual single cask release. These Oloroso sherry butts would be vatted (married together) and ‘re-casked’ for another \u003cstrong data-mce-fragment=\"1\"\u003e2 years of aging in different first-fill wood\u003c\/strong\u003e. This experimental approach to cask management unearthed an utterly delicious and unique world of flavour, highlighting the impact and influence these additional maturations have on one same original whisky. Today’s releases focus on \u003cstrong data-mce-fragment=\"1\"\u003eOloroso sherry and PX sherry casks\u003c\/strong\u003eused for additional maturation, offering a full-throttle sherry-bombing experience! Each cask is equally decadent whilst bringing their unique flavour to the table. \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cstrong data-mce-fragment=\"1\"\u003eCask No. 24.159 \u003c\/strong\u003e\u003cstrong data-mce-fragment=\"1\"\u003ePast glories \u003c\/strong\u003edelves into the meatier side of the spectrum with jerky, brisket and salami being served up with mole sauce and fig chutney. \u003cstrong data-mce-fragment=\"1\"\u003eCask No. 24.160 Baked treats in a humidor \u003c\/strong\u003epresents riper fruit-forward notes of plums, prunes and apples with honey, maple and toffee richness to sweeten the deal. Whilst these two casks were aged in Oloroso sherry, \u003cstrong data-mce-fragment=\"1\"\u003eCask No. 24.165 Vintage clothes \u003c\/strong\u003esaw its second maturation in PX cask. With water we found plums baked with green chartreuse, walnuts toasted in oil, caraway, mincemeat, petrichor and dank, leathery dunnage. The palate was full-on and fantastically deep with spiced fig chutney, metal polish, beef stock, smoked dark chocolate, mole sauce, spiced marzipan, walnut oil and cinnamon bark. Reduction brought balsamic reduction drizzled over raspberries, maraschino juices, cured game meats, bitter chocolate and red liquorice. At ten years of age, we combined selected oloroso butts from this distillery into a variety of different casks. The nose is spectacular – plums, prunes and almonds, Demerara, sherry, oranges, cherry cola and wine-soaked, flamenco-battered floorboards in a Seville bar. The palate unfolds in waves – root beer, vanilla, ripe figs, red apples, leather and medicinal notes. The reduced nose gets Madeira molasses cake in a humidor, treacle tart, damson jam and honeyed waffles. Water brought a big hit of balsamic-tinged PX along with fig syrup and chopped dates. When neat the palate was full on with spicy cask char, Crème Brûlée, Nutella and toasted trail mix. A little reduction gave us green pepper, rum 'n' raisin fudge, condensed milk, chocolate stout and pickled walnuts. At 10 years of age, we combined selected casks from the same distillery. A big, sensuous glass of PX sherry; we were smitten! With water we got marzipan, spiced chocolate, herbal liqueurs and dried cherries. The palate was big and spicy on arrival, showing lots of herbal cocktail bitters, hessian and five spice. Reduction brought a massively spicy sherry vibe along with bags of dark chocolate, cured meats and posh liquorice. Meaty, thick, unctuous and deeply alluring. Water turned it into hot Ribena! Then mad notes of mulled Buckfast, passion flowers, strawberry laces, mineral oils, hessian and thick, musty dunnage earthiness. The neat palate was rich with hardwood resins and an immense, assertive peppery spiciness. Smoked red chilli, paprika, damson chutney, iodine droplets, natural tar and bitter herbal medicines. Water brought thick stout beer, chilli-infused hot chocolate, charred herbs, BBQ embers, cloves and mustard seeds popping in hot oil.
