Incredibly gentle but still with a ‘tannic grip’, a perfect marriage between dark chocolate, Grand Marnier and candied orange rind – all in a truffle. A tiny drop of water and you will be on a magic carpet ride to Alcaiceria, the Great Bazaar of Granada, while on the palate you watched the sunset over the city and the Alhambra. The mouthfeel had a sweet, syrupy texture with raisins, caramel and maple syrup but, remaining in the background, was the meaty note of well-fried bacon on top of a pancake stack. With the addition of water, we found ourselves in a mountain bothy searing venison in a cast-iron pan. On the palate we enjoyed the venison steak with a blueberry sauce and a red wine jus. Water added a fine perfume to the nose, promoted raisins, and added burnt honeycomb. The palate finished as an echo of the nose, with added winter spice and chunks of nougat.
