The resulting whisky has bags of character, wisps of smoke, and an abundance of honey. Reminiscent of \"old-school\" blends of the past, we thought. What witchcraft and molten japery is this? At least, that's what our raised eyebrows and throaty musings queried. Surely this dram was much older and much more 'old style' that it had a right to be? We detected deep and enticing notes of soft, heathery peat smoke. Then encroaching medicinal charms, pine wood, camphor, cooling bonfire embers and tendrils of seaweed! Water dialed up the charm vibes to 'Roger Moore': elegant wood smoke, fragrant phenolics, old herbal and tar liqueurs and a kiss of cask-aged mead. The palate was decadently rich and mouthcoating, yet warming and gentle. Its rich herbal character mingled with more medicines, dried mint, mineral oils and fatty sheep wool oils. The neat palate offered a robust body and intense flavours; initially caramel sauce and fig jam sweetness, followed by considerable smoke, spice and saltiness (burnt toast, lapsang souchong tea and a beach bonfire clambake). With water the nose settled to maple bacon, smoked oysters, dried papaya and dying embers. A zingy sweetness at first on the palate – like a sip of cinnamon, clove and lemon tea – before a smooth, sweet creaminess with notes of banana, toffee and, again, cloves reminded some of us of a German wheat beer. Following reduction, vanilla notes in the form of ice cream and a sponge cake appeared before deeper expressions of clover honey, wood polish and pine trees developed. On the palate there were spiced banana chocolate sundaes as well as spiced banana and walnut pies. Following careful reduction, a refreshing peppermint tea was served at first before we discovered coconut and lime jellies and lemon verbena ice cream over poached pears. Adding water brought forward a whole new dimension, delivering creamy, aromatic heather honey and tepache, a refreshing drink made from pineapple peels and brown sugar. Overall an austere and powerful profile, the Panel agreed. Water made it really very tarry, but also sharper with more sea air and coastal power. We also noted green olives and pickled lemons. The neat palate was very big and oily in mouthfeel, with immediate flavours of raw, dirty peat, along with puffer smoke, more anchovy paste and soy sauce. Reduction brought huge ashy smoke, along with even greater 'fatness' of mouthfeel and pure seawater, petrol, capers in seawater and both shades of olive. What a beast!
